Chow Mein Sandwich Recipe
Chow mein sandwich, drive-in specialties, and cafes on the south coast of Massachusetts and Rhode Island east of Narragansett Bay exist since Frederick Wong started the Oriental Chow Mein Company in 1936. Original chow mein sandwich made with noodles made by a family in an old building on Fall River.
The noodles are crunchy, not soft like in chow mein some other place and the traditional meatless chow mein sandwich, just noodles with bean sprout sauce on a plate along with hamburger buns. Presuming you don't have access to Oriental Chow Mein Co.noodles, marketed locally under the Hoo-Me trademark, the following recipe includes instructions for frying them yourself chow mein sandwich.
INGREDIENTS
- 1 lb dried thin chinese egg noodles
- 1/4 cup cornstarch
- vegetable oil for frying, plus 2 tbsp
- 4 cups chicken stock
- 2 stalks celery, trimmed and cut on the bias into thin pieces
- 1 large white onion , cut into long thin strips
- 4 oz mung bean sprouts, well rinsed and patted dry
- 1 tbsp minced garlic
- 4 hamburger buns, warmed
- 1/4 cup molasses
Instructions
- In a large saucepan of boiling water, cook the egg noodles until almost tender and still a bit hard. Drain, rinse under running cold water, drain and dry. Use a paper towel to dry it and divide it into four equal clumps.
- Heat the oil to 350 degrees. Use a slotted spoon to fry each clump of noodles until crispy and brown. Drain each hole on paper towels.
- In 4 stages, add noodles in a circular sieve and cook until golden. Remove and drain on paper towels.
- In a small bowl, mix 1 cup of broth with cornstarch, and stir until dissolved into a thin paste.
- Heat 2 tablespoons of vegetable oil in a wok or cast-iron skillet. Add the celery, onion, and garlic and cook until it begins to soften about 2 minutes. Add the bean sprouts and cook for 1 more minute until they start to limp. Add the remaining 3 cups of chicken stock, then add the cornstarch mixture, stirring constantly until the mixture thickens. Add the molasses, stir a few more times and remove the pan from the heat.
- To serve, place the bottom of 1 hamburger bun on each of the 4 large plates lined with wax paper. Place the round fried noodles on top of the bread and topped with chow mein. Sprinkle with the rest of the hamburger bread and wrap tightly with wax paper. Serve immediately.
